Did you know that Sauerkraut, or fermented cabbage, may provide such an immune system boost as to prevent one from even bird flu infection. A report from the BBC Network said that scientists at Seoul National University in South Korea fed an extract of kimchi, a spicy Korean variant of sauerkraut, to 13 chickens infected with avian flu, and a week later, 11 of the birds started to recover. Sauerkraut like kimchi, contains lactic acid bacteria known to assist digestion and improve immunity. Researchers have found that fermenting cabbage and other cruciferous vegetables (broccoli, brussel sprouts) produces even more cancer-preventing power within sulforaphane, indole-3-carbinol, selenium, and glucosinolates already produced in these vegetables.
